Short answer
You have two clean options, and both are settings rather than gambles. Auto-convert each payment to dollars at the moment of sale, so you never hold crypto. Or accept a stablecoin, which holds a dollar value by design. Either way, a price swing after the sale does not touch you.
The two options
- Auto-convert to dollars: the processor sells the crypto instantly and sends you cash.
- Accept a stablecoin: a dollar of stablecoin stays a dollar, nothing to convert.
Only if you deliberately choose to hold Bitcoin do you take on price movement, and that is a separate decision.

- That accepting crypto forces price exposure. Conversion or stablecoins remove it entirely.
